Sweet Lassi

Good morning everyone,

Sweet lassi is a very sweet treat for hot days.  I particularly enjoy the flavours of the saffron and the rose water in this drink, which are earthy and refreshing at the same time.

If you can’t find rose water or don’t like it’s flavour, you can substitute 1/2 teaspoon of cardamom powder for the rose water or you could leave it out all together.

Sweet Lassi

1 cup fresh, unsweetened yogourt
1 cup milk
1 teaspoon rose water (optional, you could substitute cardamom powder)
4 – 5 tablespoons raw or brown sugar, or to taste
3 – 4 strands saffron (optional)

Place all ingredients in a blender.  Process on the puree setting until the sugar is incorporated.

Tips

You can adjust the sugar to your taste and even substitute the raw sugar that I use for honey, agave syrup, maple syrup, or granulated sugar, as you like.

This lassi is relatively thin.  If you want a thicker lassi, use more yogourt and less milk.  For a thinner lassi, use more milk and less yogourt.

You can make this even more cooling and refreshing by pouring it over crushed ice or throwing some ice right there in the blender while you’re preparing it.

It will keep in the refrigerator for a couple of days.
