Good morning everyone,
When I make veg burgers for the family, the husband unit inevitably asks for potato wedges. They are easy to make and you can flavour them in any way that you want. I look for flavourings that are lower in sodium, typically and I bake the wedges with a little olive oil.
These are really easy to make and a good starter dish for young cooks to learn. This is my sweet potato version:
Sweet Potato Wedges
3 small sweet potatoes
1 tablespoon olive oil
1 – 1 1/2 teaspoon flavoured salt
1 teaspoon each salt and black pepper
Preheat oven to 350F. Scrub the sweet potatoes well. Trim off any remaining root “hairs”. Cut the potatoes into wedges. Arrange the wedges in the bottom of a large casserole or on a baking sheet.
Sprinkle with olive oil and seasonings. Stir or shake to distribute the seasonings and oil over the wedges.
Bake in oven for 35 minutes or until they become tender and golden.
