Good morning everyone and Happy Mother’s Day!
At our home, we enjoy pasta once or twice a week. The pasta sauce we use always depends on what’s available at the market that week. This week it was fresh, beautiful basil, which is one of my favourite things.
This sauce really highlights the taste of the basil without it becoming overwhelming and, bonus, it makes my kitchen smell so, so good.
Basil and Onion Pasta Sauce
1 tablespoon olive oil
4 cloves of garlic, minced
2 onions, diced
1 sweet pepper, seeded and diced
1 650 ml bottle strained tomatoes
1 teaspoon salt
1 teaspoon pepper
handful of fresh basil, sliced
In a heavy pot, heat the olive oil over medium high heat. When hot, add garlic and saute for 30 seconds. Add the onion and sweet pepper and saute until the onion begins to turn translucent. Add the strained tomatoes, salt, pepper and sliced basil and reduce to a simmer.
Allow the sauce to simmer at least one hour (the longer the better), stirring occassionally to prevent sticking.
Serve with your favourite pasta!
