We just made some lovely old-fashioned puff pastry. What do you do when you have fresh puff pastry? Anything you like, really but we chose to make apple berry turnovers. So simply, so delicious, such an awesome treat!
Apple Berry Turnovers
1 recipe of old-fashioned puff pastry
2 cups apples, peeled, cored and finely chopped
1 cup blackberries (or any berry you like)
2 tablespoons brown sugar
Preheat oven to 400F. In a large bowl, combine apples and blackberries. Sprinkle brown sugar over the fruit and set aside.
Roll out the puff pastry to 1/4″ rectangle. Cut the dough into 15 or 16 squares of pastry.
Put about 3 tablespoons apple/blackberry mixture onto the centre of each puff pastry square and fold over to form a triangle. Use a little water if necessary to close the dough, or pinch well (it will open will cooking).
Place turnovers at least 1″ apart on a baking pan lined with parchment paper or silicone.
Bake the turnovers for 20 – 25 minutes until well puffed up and golden brown on top. Allow turnovers to cool for at least 10 minutes before serving.
You can use any kind of fruit filling that you want in these popovers and can even glaze them with a confectioner’s sugar glaze if you like.
This pastry does not freeze well, so here’s the bad news… you’re going to find folks to eat them all. I know, I know… that’s going to be tough. The finding other folks part anyway because if you’re like me, they just don’t last long enough to make it out of the kitchen. 😀
