Good morning everyone,
We are having sweet and spicy tofu, rice and steamed vegetables with a balsamic glaze for dinner tonight, after a weekend of indulging in pizza and apple pie.
Balsamic Glaze with Steamed Vegetables
1 head of broccoli, chopped
1 sweet pepper, seeded and chopped
1/2 cup balsamic vinegar
1/2 cup butter
2 tablespoons brown sugar
1/4 teaspoon salt
1/4 teaspoon ground black pepper
Steam the vegetables until they are crisp tender, drain well and set aside. In a small pot, reduce the 1/2 cup vinegar to half over high heat. Add the remaining ingredients, reduce heat to low and stir until butter is melted and sugar is incorporated. Serve over the steamed vegetables.
That’s it! Easy peasy and something a little different for your vegetables.
