Good evening everyone,
Tonight we had some green lentil dal and naan for dinner and these lovely, light potato pancakes for an appetizer before hand. I should have made fewer – these were popular and disappeared before I knew it!
1 cup peeled and grated potato
1/2 cup rice flour
1/4 cup finely chopped coriander
3 green chilies, finely chopped
up to 1 cup water
Mix all ingredients together in a bowl. Allow the bowl to sit at least 10 minutes. Drain off additional water from the bowl. In a non-stick pan over medium-low heat, add 3 or 4 pancakes by dropping one generous tablespoon at a time. Allow to cook 1 1/2 – 2 minutes per side until lightly browned. Transfer to a serving plate and continue in this fashion until all of the pancake mixture is used.
Serve with tomato chutney, ketchup or other condiment of your choice.
That’s it. Easy peasy, reasonably healthy snack.
