Good morning everyone,
Blech… brachytherapy week. Everything smells terrible and tastes like nothing but the therapy will help my body rid itself of the cancer and will make it hard for the cancer to return so… I wanted to make a nice, simple, easy meals that are full of flavour for the family this week, without exhausting myself or overwhelming myself with strong aromas.
So we’re having black bean nachos with some pico de gallo and salsa verde. I’ve included the higher fat version – with avocado, in the salsa verde because avocado has good fats and I need some extra energy stores this week. I remember it being so delicious although today I can’t really taste it.
Salsa Verde with Avocado
4 tomatillos (small, green tomato like fruit found in many large supermarkets)
1 clove garlic
1 jalapeno pepper
1/4 cup cilantro leaves
Salt, to taste
Preheat oven to 400F. Rinse and dry the tomatillos. Roast the tomatillos until cooked through and the colour begins to change.
